Ok... so no matter how many times I turn audio description “off” on the Disney+ app it always defaults back to on when I switch movies or restart the app...

I think it's an issue with the app rather than the TV. It happens to me with Youtube sometimes. Try going to Settings - Apps - Disney+ - Storage - Clear cache/data. Then log in again and see if it remembers your preferences once you set them up again.
